This is a great alternative to butter! Just trying to make better choices 1 ingredient at a time!!

Mango Salsa:

Great refreshing snack! I was able to get all the ingredients from Aldi so it cut the cost in 1/2. All you need is :

  • Mango
  • Lime Juice
  • Red Onion
  • Cilantro
  • Red Bell Pepper
  • Jalapeno Pepper
  • Salt

Simple Easy Corn Bread:

So easy Justice (My 8 year old) was able to make it! All you need is:

  • 2 boxes of Jiffy
  • 1 can of cream corn
  • 2 eggs ( I added 2 tbs of melted butter) stir and bake.
  • Cook on 350 for about 30 min or until golden brown at the top!

All you need is some biscuits and an Air Fryer! This is a great Saturday morning treat. Especially when I don’t feel like loading 3 kids in the car to go to D&D.

12:00 meeting was canceled so decided to make lunch fun. If your tired of the same old sandwich just take out a cookie cutter and make a shapes, grab some fruit and chocolate chips and decorate it. I call this the kitten heart 😂! Have fun with lunch it will put a smile on the kids faces (or fake smiles🙈)

I generally celebrate Mothers Day on Saturday because Sunday is all about my mom. So this year my hubby made an amazing brunch. I encourage you to try the Lemon Ricotta Pancakes. I will share the recipe below! Thanks Whit for getting me hooked !
